When is winter ending?  This lingering cold weather makes me crave soup.  Tomato soup with a grilled cheese sandwich is unbeatable.


  • 1 onion, chopped
  • 3 Tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 T cane sugar
  • 2t teaspoons cumin 
  • 1 t paprika
  • 1 t salt
  • pinch pepper
  • 2 T vinegar or sherry
  • 1 can tomatoes (about 4 cups)
  • 4 cups vegetable stock


1.  In soup pot, cook onions in olive oil 5 minutes. Add garlic, sugar, cumin, paprika and cook another minute or two, stirring often.  Add salt & pepper.

2.  Add vinegar and simmer until absorbed-1 or 2 minutes.  Add tomatoes and stock and simmer 15 minutes.

3.  Puree and serve.  You could garnish with pesto or lemon or salt and pepper.
