Knishes are not hard to make.  This recipe combines a classic pie crust and mashed potatoes mixed with eggs to lighten the filling up a bit.

To make the dough, follow this or your favorite recipe for pie crust.


  • 2 cups all purpose flour (you can substitute up to 1/2 cup whole wheat flour)
  • 1/2 cup butter, cut into small cubes.
  • Combine until butter pieces are tiny, almost undiscernable.
  • Add and mix: 
  • 1 tablespoon sugar 
  • 1 teaspoon salt.
  • Add 1/4 cup ice cold water and mix until barely combined.  Divide into two balls and refrigerate 1 hour or overnight.

To make the filling:

  • Boil 5 small/medium  potatoes
  • Sautee one onion or shallot in 3 tablespoons butter for about five minutes.
  • Add sauteed onion, 3 more tablespoons butter or olive oil, 2 eggs, salt and pepper to taste to boiled potatoes and mash them all together.


To assemble knishes:

Roll out the dough as if you are making a pie.  Put a round soup spoonful of filling on the dough and cut the dough to a reasonable size so that you can fold the sides up toward the center.  Leave a bit of the potato smiling out of the top of the dough.  If you like, brush with egg to make them shiny.

Place knishes on an ungreased  pan and bake at 425 for about 20 minutes, until the bottoms are gently browned.
